I'd send you to the standard sites for good Buffyverse fic: Polyamorous and BSO. Make sure you read Cicatrix, because it's fucking twisted and brilliant. Also Rivka's Allegiances, which takes season 4 and subverts it into horror. ::shudder::
Neither of those are Buffy/Giles, but they're oh so very good anyway.
